Pineapple Pudding

Pineapple Pudding

2/3 cup of all purpose flour

6 eggs separated

1 1/2 cup of sugar divided

Dash of salt

4 cups of milk

1 tsp Vanilla

45 Vanilla Wafers

1 – 20 oz. can of pineapple chunks (Drained of liquid)

Preheat oven to 350 degrees. Mix 1 cup of the sugar with the flour and salt in the top of a double boiler. Blend in 6 eggs and milk. Cook uncovered, over boiling water 10 to 12 min. or until thickened stirring constantly. Remove from heat and stir in vanilla.

In a 1/1/2 quart baking dish layer 1/3 of cookies, then 1/3 pudding and then i/3 of the pineapple chunks. End with pudding.

In a mixer, blend egg whites while slowly adding sugar. Mix until peaks form.

Top the pudding with the egg white mixture and bake for about 8 to 10 minutes or until topping is brown. Let cool. Then refrigerate for 30 to 40 minutes. Serve cold.
