Meatball Melt w/Pepperjack Cheese

Ingredients:

– Follow the previous Meatball Recipe on the blog.  You will need about 5 meatballs halved

– 1/2 small onion Julienned sliced

– 2 slices of your favorite sandwich bread

– 1 TBS Extra Virgin Olive Oil

– 2 slices of Pepper Jack Cheese

– 4 TBS margarine or butter

 

Equipment:

– 1 skillet large enough to fit two slices of bread

– Spatula

– Oven pan

– Tongs

Instructions:

Preheat Oven to 425 degrees

Place the meatballs in the oven pan had bake for about 30 minutes, turning after 15 minutes. When you turn the meatballs, add the sliced onions over the meatballs.  Drizzle the Extra Virgin Olive Oil.  Add salt and pepper.  Let the meatballs cook the remaining. Remove from oven and set aside.  After the meatballs cool cut in half.

Heat the skillet to medium low heat and add 1 TBS of butter.  Spread the pad of butter around as it melt in the shape of a square.  Place one of the slices of bread on the butter.  Repeat this step with the other slice of bread.  Let the two slices of bread toast to a golden brown color and remove to a plate.

Take a slice of Pepper Jack Cheese and place it on the toasted side of the bread.  repeat this step with the other slice of cheese and toast.

Place the meatball halves on one side of the toast with the cheese with onions.  Top this with the other piece of cheesed toast.   Melt another pad of butter and place the sandwich on one other side that isn’t toasted already on the melted butter.  Toast and repeat this step on the other side.
