Simply Baked Chicken

This is quite simply the easiest dish in the world to make.  This has become our go to dish for our 17 day diet.


About 6 Boneless / Skinless Chicken Thighs (You can use B/S Chicken Breasts but butterfly them so they don’t dry out.

Kosher salt

Freshly cracked black pepper

Adobo seasoning

Small Onion (Medium sliced)

Extra Virgin Olive Oil


Cookie sheet (With at least an inch high so liquid from cooking doesn’t spill)

Aluminum Foil



Preheat oven to 425 degrees

Wash and pd dried the chicken.  Season the chicken with the Kosher salt, Freshly Cracked Black Pepper, and Adobo on both sides. Drizzle a little Extra Virgin Olive Oil on each side. Place the seasoned oiled chicken on the cookie sheet that has been lined with the Aluminum Foil.

Place the onion slices to in the bowl and drizzle with Extra Virgin Olive Oil.  Sprinkle Kosher Salt and Freshly Cracked Black Pepper on the onions.  Toss with your fingers until onions are coated with the oil and seasonings.

Place the coated onions slices on top on each chicken thigh. Place the cookie sheet in the preheated oven and cook for 10 minutes then turn chicken on the other side and cook for another 10 minutes.
