Baked Fish w/Tomato, Thyme and capers

This one is also for the 17 day diet.  Pretty simple.

 

Ingredients:

2 filets of Cod, Halibut or other firm white fish

2 slices of tomatoes

1/2 teaspoon of Capers

Lawry’s Seasoning Salt (If you don’t have this use Kosher Salt ans a little paprika)

Freshly Cracked Black Pepper

Fresh Thyme – about 1/2 a teaspoon

Adobo

Extra Virgin Olive Oil

Lemon slice (Optional)

 

Equipment:

Cookie Sheet

Aluminum Foil

Tongs

 

Instructions:

Preheat oven to 425 degrees

Rinse fish and pat dry.

Sprinkle both sides fish with salt, pepper and Adobo. Then drizzle fish with a little Extra Virgin Olive Oil on both sides of fish. Place the fish on the cookie sheet.  Place the tomato slices over the fish.  Sprinkle just a little salt and pepper over the tomatoes.

Sprinkle Fresh Thyme leaves and Capers over the fish.

Place cookie sheet in preheated oven.  Bake fish for 10 – 15 minutes until firm and flaky.
