Sauteed Spinach w/Onions and Garlic

I made this last night and it was so fast and easy that I thought I’d share it with you.  It takes about 7 minutes and is delicious.

Spinach Lightly Sauteed w/Onions

Ingredients

–       One -12 oz bag of Ready-To-Eat Baby Spinach

–       A small onion cut long ways into thin slices

–       ¼ tsp of minced Garlic

–       2 TBS of Extra Virgin Olive Oil

–       Fresh Cracked Black Pepper

–       Kosher Salt

–       ¼ tsp Pepper Flakes (Optional)

Equipment

–       1 large non-stick skillet

–       Wooden spoon

–       Tongs

–       Knife

–       Cutting Board

Instructions

Pre-heat the skillet over medium heat.  Add 1 TBS of the Extra Virgin Olive Oil.  After about 45 seconds add the sliced onion and add a little Kosher Salt and Fresh Cracked Black Pepper. Sauté onion until they’re just starting to brown. (About a minute or so)  Add the minced garlic. Toss or stir as needed.

Add Baby Spinach a hand full at a time until the whole bag is used.

(It will appear that there is too much spinach to manage in the skillet.  Don’t worry.  The spinach reduces volume when it wilts and it will all fit.)

Turn spinach/onion and garlic mixture with tongs until onions are thoroughly incorporated in the spinach.  Add salt and pepper to taste.  (And red pepper flakes if desired)

This is a fast dish to cook.  This all takes about 7 minutes.
