Yesterday’s Lunch 02/07/2013


I made the best Pot Roast I ever made yesterday.  I slow cooked it with onions, bell peppers, and celery.  It was for a delicious Pot Roast Po-Boy sandwich.

I placed the tender beef on a bed of fresh shredded lettuce and perfectly ripened tomato slices all in a fresh hoagie bun.

There was no need for mayo because the beef was topped with the roasted onions, bell peppers and celery that were cooked with the beef.

But wait, there’s more.

It was served with Scalloped Potato Gratin.  I used two cheeses which added to the flavor layering.

The vegetarian selection was a favorite.  Baby Spinach Salad – Fresh Baby Spinach leaves w/seasonal Florida Strawberries, toasted Pecan, Dried Cranberries and Feta Cheese with our special salad dressing.
