Tuesday’s Lunch 02/26/2013

Tuesday’s lunch was one my favorites, Rosemary Chicken with Chippoline Onions and Mushrooms over Basmati Rice.

The tender chicken is marinated overnight and pan seared before adding Chippoline Onions.  Right before placing the pan of chicken in the oven we add the mushrooms.  Five minutes before it’s done fresh chopped Rosemary is added and perfumes the Chicken with that delicious flavor.

The Vegetarian selection was a request for the Mini-Multi-Colored Bell Peppers over Basmati Rice.
