HOTD giving back 2014. Rosemary Chicken!

So I cooked my 2nd meal for my client undergoing chemo therapy.  The Rosemary Chicken was such a hit last night, I wanted her to have something special.  This dish is high protein.

Rosemary Chicken


Whole Chicken cut up

Fresh Rosemary

Kosher salt

Fresh Cracked Ground Pepper


1 TBS of Vegetable Oil

8 -10 Chipollini Onions (Peeled and left whole)

20 Button Mushrooms (cut in half)


I large Non-Stick Skillet (Oven Safe)



Preheat the over to 425°. Rinse and pat dry chicken w/paper towels. Season chicken with  Adobo, Kosher Salt, and Pepper.

Heat skillet over medium heat until hot.  Add vegetable oil in hot skillet. Add chicken to skillet.  You should hear the sizzle.  Let the chicken cook for a few minutes until golden brown before turning on the other side.

Once chicken is browned, add the onions and let them brown before turning.

Move the chicken to one side of the skillet and add a layer of mushrooms.  Place the displaced chicken on top of the mushrooms.  Continue this to the other side of the skillet until the chicken is covering the mushrooms. After a few minutes place the skillet in the oven.

Let the chicken bake for about 20 minutes until done or internal temperature is 165-175 degrees.

Approximately 5 minute prior to the chicken being done sprinkle the chopped fresh Rosemary over the chicken.

I serve it with Basmati Rice.
